Celme Tostado

Celme Tostado is a prime example of the very rare Tostado wines from Ribeiro. It is a blend of 85% Treixadura, 10% Loureira and 5% Albariño. These grapes come from 25 years old vines on decomposed granite soil.

This is an extremely complex wine, both in terms of execution and personality.

The process starts by handpicking the best 10,000 clusters out of the vineyard. These clusters are subsequently hanged in a naturally ventilated facility where they stay for 6 months, being inspected on a daily basis to remove the grapes that don’t age adequately. Once the remaining grapes transition into raisins, they’re unhanged and pressed.

Celme Tostado’s fermentation starts in steel, in a temperature controlled room. Afterward, it’s transferred to 100l oak barrels where it rests for 8 months. Once bottled, it rests for an additional 6 months.

Its nose brings dried fruit, honey, toast and candied fruit.

Its palate shows an equilibrium between sweetness and bitterness.

It has a dark gold color, with shades of copper.

This wine is intended as an appetizer or dessert.
